White Truffles.

Here are a few secret pics that I took at work of some white truffles.
They cost £2400 a kilo!!!!!!!!!!
We bought half a kilo for £1200, thats about £100 each!!!!!!!!!
We serve them as a supplement on a few dishes, one of which includes Wagyu beef 'T bone', the complete dish 'Grilled Wagyu T bone (between 400 and 500grams) with white truffle (around 6grams)', can sell for in the restaurant for around £400! That probably makes it Londons most expensive dish!

Todays Bottom of the Fridge Soup.

Bit of a cold on the way, freezing outside, what can I eat for lunch??????? Well its been a while, so I think I might have enough 'bits n bobs' to make a 'bottom of the fridge soup'!

Ingredients,
-A big potato,
-A small potato,
-Half a leek,
-A bit of broccoli,
-A hand full of watercress,
-3 shallots,
-A few peas (about half a cup),
-Chicken stock to cover,
-Salt, pepper, nutmeg.
-A few of the fried breadcrumbs left over from a recent pheasant feast (optional)!

Method,
Chop the veggies, fry the shallots and leek in butter until soft, add the rest of the veggies, cover with stock, simmer for 30 minutes, blend, season, garnish with the breadcrumbs (if using) and serve.

Smoked Garlic.

My uncle Frank gave me some smoked garlic which he bought back from a recent trip to the Isle of White.

Chefs Night Out, Bar Shu.

Only about 2 times a year do we get out from work before midnight, and tonight was one of them, we had an exclusive canape party, so we were done by 9! So we headed over to Bar Shu in Frith street, Soho.
Schechaun cuisine, which includes allot of offal, chili oil and deep fried chillies.
We tried 80% of the menu! Dishes included, tripe, trotters, duck tongue, jellyfish and deep fried lamb! This is real food, hungry chefs food, no fannying around! Offal with loadsa chillie!
The bill was about £600, which sounds allot but there was 12 of us! Although I did think it a bit cheeky of them for charging us £2 for 4 take away containers!
