Next week, I am going to visit my old mate, mrs. tee, aka, the mushroom ladie. She has promised to take me mushroom hunting, I went down to the New Forest a few months ago, to see her, but there were no wild mushrooms about so we spent the evening trimming Shitake mushrooms (which she sells to restaurants, including Le Gavroche and the Greenhouse) and drinking Sherry that she found at the back of a cupboard in her kitchen!
She told me that she knows where we will definately find wild mushrooms this time, so I will report back in a few days, with pictures and I am sure a few stories!

Recently I cooked at Nuno Mende's ''pop up'' Restaurand in Shorditch, The Loft, I managed to get my hands on these amazing Scottish Scallops from a company called Keltic, apparently they were 12 years old, you can tell by the ridges on the shell, each ridge equals a year. I cooked them simply in a pan, then rested them for a few minutes, before putting them back into their shells and spooning over a sauce made with fresh coconut cream, which I made, infused with a little galangal, really simply, but with produce like this you dont really need to do much to it!
